Colombo Pork

A delicious spicy and savory dish, this pork colombo recipe is also easy to make.

Ingredients for 4 persons :

  • 800 g of pork shoulder (or loin)
  • 40 g semi-salted butter
  • 3 tbsp. of colombo powder
  • 1 bouquet garni
  • 30 cl of white chicken stock
  • 200 g of basmati rice
  • 15 cl of heavy cream
  • Salt, freshly ground pepper

For the marinade:

  • 1 lemon
  • 1 clove of garlic
  • 1 onion
  • 1 sweet pepper

Colombo Pork

- Cut the meat into pieces (or have it done by your butcher).

For the marinade:

- Squeeze the lemon and collect its juice.

- Peel, degerm and chop the garlic.

- Peel and chop the onion.

- Wash and cut the pepper into thin slices.

- Gather all of these ingredients in a salad bowl.

- Place the pieces of pork in the marinade, sprinkle with colombo powder. Mix and marinate for 30 minutes.

- Remove them then brown them in butter in a casserole dish until they are golden brown. Pour the marinade, add the colombo powder and the bouquet garni. Pour in the white chicken stock. Cook for 50 minutes at low boils.

- Meanwhile, cook the rice in boiling water salted with coarse salt. Drain. Keep warm.

- Remove the pieces of pork from the casserole dish. Evaporate the cooking juices obtained for 5 to 6 minutes.

Stir in the cream and cook for another 5 minutes, checking the seasoning. Return the meat to the casserole dish.

- Serve the hot pork colombo in a dish with the rice.
